Gingerbread Cookie Ice Cream Sandwiches

Yummmmmmm! This sounds like the best ice cream sandwich EVER! Here are the ingredients: 8 gingerbread cookies, 4 scoops of vanilla ice cream, rainbow sprinkles, and mini chocolate chips. Here are the directions: 1. Unwrap gingerbread cookies. 2. Spread ice cream on the backs of the cookies. Sandwich together. 3. Decorate with candy sprinkles and chocolate chips. 4. Place sandwiches in a covered container and keep frozen until ready to eat. Sounds good!
